The team at The Bay Mordi are privileged to work with our very talented Head Chef. He has a wealth of knowledge & experience working within Michelin-Starred restaurants in England. He has the utmost respect for all fresh produce, and whilst working in these high-end restaurants and has developed incredible detail and techniques.
His newly created menu focuses on presentation, keeping in mind that respect for all elements is paramount to creating these exquisite dishes without too much crazy all over the place. In Australia, we tend to throw away so much good food; this is where Liam thrives on using all elements of our produce, reducing waste, and always being at the forefront of sustainable practices. We only use local produce and ingredients locally sourced, foraged or homegrown, ensuring all our cooking is nose-to-tail.
Our General Manager, Jodi, wanted to bring simplicity city-dining and an experience to our beachside customers and our local community. She wanted to provide somewhere for locals to enjoy contemporary cuisine featuring distinct, memorable flavours that merged with modern minimalism to create a menu that showcases high-quality local ingredients.
